Use the best-quality whole foods you can—your tastebuds will notice.
Set to 300°F, a low-and-slow temperature that keeps the granola golden, not burnt.
Combine oats, nuts, shredded coconut, cinnamon, and salt in a large bowl.
In a small saucepan, warm the coconut oil/butter with the maple syrup/honey until smooth.
Remove from heat and stir in the vanilla.
Pour the warm mixture over the dry ingredients.
Stir well so every oat is glossy and coated.
Spread onto a parchment-lined baking sheet.
Press down firmly with a spatula—this is the secret to big clusters.
Bake 25–30 minutes, rotating the pan once.
